Strawberry Mousse

1 envelope unflavored gelatin

3 T cold water

1/4 cup boiling water

1 pint heavy whipping cream

1 1/2 cups powdered sugar (divided)

1 lb. fresh strawberries

1 T lime zest

1 T line juice

In small bowl, soften gelatin in cold water. Let stand for 2 minutes. Stir in boing water until gelatin dissolves; set aside.

In medium bowl, beat whipping cream at medium-high speed until slightly thickened. Gradually add 3/4 cup sugar, beat until stiff peaks form. Stir in gelatin.

In blender combine strawberries, lime juice, lime zest and 3/4 cup sugar; process until smooth.

Gently stir strawberry mixture into whipped cream.

Cover and chill for at least 4 hours.

Serve in dark chocolate dessert shells.
