Grilled onion and cheese sandwich

Slice large onion and cook in skillet in 2 T butter till onion is soft and golden brown. Stir occasionally.

Stir in 1 cup sliced mushrooms, cook and stir for 2 minutes. Remove from heat, sprinkle with sea salt and 1 tsp berry-balsamic vinegar.

Place slices of desired cheese on 4 slices of sourdough bread.

Top with onion mixture and another slice of bread.

Butter bread and cook on griddle over medium heat till cheese is melted.
