2 cups raisins
1 cup sugar
1/4 tsp salt
3 T cornstarch
1 pint Half & Half
Cover raisins with water and boil for 5 minutes then drain.
In saucepan blend together the sugar, salt, cornstarch, eggs, and Half & Half, cook over low heat, stirring constantly until thick. Add drained raisins.
Crust -
1 cup margarine
1 cup brown sugar
1 3/4 cup flour
1 3/4 cup oatmeal
1 tsp baking soda
Cream margarine and brown sugar, then add flour, oatmeal and baking soda.
Grease 9×13 cake pan and pat 2/3 of the mixture into pan. Set aside remaining crumbs for top.
Bake at 350 degrees for 10 minutes.
Pour pudding and raisin mixture over baked crust and sprinkle the remaining crumbs over top.
Bake at 350 degrees for 15 to 20 minutes.
